Hainanese Baked Curry Puff

Yesterday was Malaysia Day and some of my friends came and visited me and asked me to make some curry puff for them just like the ones in Miri. This was one of my favorites recipe and I had make it umpteen times. This time round, I made both with curry filling and custard.

Ingredients

225ml water mix with 1/4 tsp salt
2 tbsp shortening or margarine

For oil dough:
200g plain flour

For filling:
400g potatoes, cubed and cooked till soft
200g big onions, cubed
3 tbsp curry powder
1 tbsp chilli powder
2 sprigs curry leaves
1 tbsp vegetarian oyster sauce
Salt and sugar to taste
A dash of pepper
Method
To make water dough: Place flour in a mixing bowl. Rub in shortening and add in the water. Knead into a smooth dough.leave aside to rest for 10 minutes. Divide into 24 equal portions.

To make oil dough: Rub shortening or margarine into the flour to form an oily dough. Divide into 24 equal portions.

To combine into pastry: Wrap oil dough inside water dough. Flatten the dough and roll up. Repeat the process. Cut the rolled-up dough into two. Use a rolling pin to press it flat. Shape into a circle. Add filling and seal the sides. Pinch the edges to form a scallop design.

Butter Milk Buns- 奶油包

Butter Milk Buns are very popular in Malaysia and Brunei. When I tried to look for it in Perth, I could find any. I guessed this must be another Malaysian creation. This is my 2nd attempt with the fillings. The first filling recipes which I copied from a US website was totally useless and a failure. This time I used the recipe from a Brunei friend. It was a success. The Bun dough recipe was from Kuala Terengganu, a specialty over there. The Bun was very soft even after it cooled down. The butter milk was very nice as well. Two of the fillings in my buns burst during baking but that was because I did not cover up the dough well and it leaked out. Rest of the Buns were perfect. *makes 11pcs of medium size Buns Gelatinised dough 50g bread flour 35ml hot boiling water 1.
