A simple and healthy oatmeal bread

Since my last post on oatmeal bread, I have so many requests for Oatmeal bread from my friends. I think this is because there are no oatmeal bread for sale available in the market. There are wholemeal bread but not oatmeal. Oats is more healthy than wholemeal as oats are known to lower cholesterol.
I made this simple and healthy oatmeal bread on my bread machine last night with condensed milk. The texture of the bread was quite soft and the skin of the bread was surprisingly crispy. This is a very simple bread recipe which anybody can make and the measurement is quite accurate and exact

Ingredients:
• 1/2 cup quick oats
• 3 tablespoons condensed milk or honey/brown sugar
• 1 cup + 1 tablespoon boiling water
• 1 1/2 tablespoons butter
• 1 1/2 teaspoons salt
• 1 tablespoon sugar
• 3 cups bread flour
• 1/4 cup ( 60ml) milk
• 2 teaspoons active dry yeast ( I used instant dried yeast)

Preparation:
1.Put oats in a mixing bowl, pour hot boiling water over the oats. When oats have cooled but are still a bit warm, put all the ingredients in a mixing bowl and mix well. Add a little more flour or water if necessary. Mix till dough is not sticky and leave side of bowl or not sticking to hands.
2.Transfer to bread pan and select basic and light crust and press start.

Make 1 1/2 lb bread .

Butter Milk Buns- 奶油包

Butter Milk Buns are very popular in Malaysia and Brunei. When I tried to look for it in Perth, I could find any. I guessed this must be another Malaysian creation. This is my 2nd attempt with the fillings. The first filling recipes which I copied from a US website was totally useless and a failure. This time I used the recipe from a Brunei friend. It was a success. The Bun dough recipe was from Kuala Terengganu, a specialty over there. The Bun was very soft even after it cooled down. The butter milk was very nice as well. Two of the fillings in my buns burst during baking but that was because I did not cover up the dough well and it leaked out. Rest of the Buns were perfect. *makes 11pcs of medium size Buns Gelatinised dough 50g bread flour 35ml hot boiling water 1.
